Ingredients

  • 4 pounds fresh live mussels 1.8 kg, cleaned and debearded
  • 3 tablespoons unsalted butter 42 g
  • 1 large leek approximately 7 ounces (200 g), thoroughly washed and thinly sliced
  • 2 cloves garlic finely minced
  • 3 tablespoons Scotch whisky 45 ml, optional
  • 3/4 cup low-sodium vegetable or seafood stock 180 ml
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon freshly ground black pepper or to taste
  • 2 tablespoons fresh flat-leaf parsley 8 g, chopped
  • 1 teaspoon fresh lemon juice 5 ml, or to taste
  • Crusty bread to serve, optional

Equipment

  • Large heavy-bottomed pot or Dutch oven with a well-fitting lid
  • Colander
  • Vegetable knife
  • Cutting board
  • Wooden spoon
  • Measuring cups and spoons
  • Large serving bowls

Method

Prepare the Mussels
  1. Inspect the mussels carefully, discarding any with cracked or broken shells. Tap any open mussels gently and discard those that do not close. Rinse under cold running water, scrub away debris and remove any remaining beards. Keep refrigerated until ready to cook.
Cook the Leeks
  1. Melt the butter in a large, heavy-bottomed pot over medium heat. Add the sliced leek and cook gently for 5 to 7 minutes, stirring occasionally, until softened but not browned. Add the garlic and thyme and cook for another 30 seconds.
Make the Broth
  1. Pour in the Scotch whisky, if using, followed by the vegetable or seafood stock. Add the black pepper and bring the liquid to a gentle simmer. For an alcohol-free version, replace the whisky with an equal quantity of additional stock.
Steam the Mussels
  1. Add the cleaned mussels to the pot and cover immediately with a well-fitting lid. Steam for approximately 5 to 9 minutes, shaking the pot gently once or twice, until the shells open and the mussels are cooked through. Discard any mussels that remain closed.
Finish and Serve
  1. Remove the pot from the heat. Stir in the chopped parsley and lemon juice. Taste the broth and adjust the seasoning if needed. Divide the mussels between four warm bowls and spoon the buttery leek broth over the top. Serve immediately with crusty bread.

Notes

Brit & Skillet Tip:  The real treasure in this recipe is the broth! Once the mussels open, their natural juices mingle with the butter, sweet leeks and herbs. Serve plenty of crusty bread alongside so none of that delicious flavour goes to waste.
Use fresh, live mussels from a reputable seafood supplier.
Keep live mussels refrigerated under a loosely placed damp cloth. Do not store them submerged in water or in an airtight container.
Do not add salt until you've tasted the finished broth. Mussels naturally release salty liquid as they cook.
A large lidded Dutch oven or stockpot works best for the full recipe. Cook in batches if necessary to avoid overcrowding.
The whisky is optional. Cooking does not guarantee that all alcohol evaporates, so use the stock alternative for an alcohol-free dish.
Nutrition values are estimates and exclude the optional crusty bread. Actual values vary with mussel size, edible yield and the amount of broth consumed.
